I’ve been trying to get creative during this quarantine and use what we have at home to make some treats to keep around the house while also trying to keep it healthy. (Scroll down for a GIVEAWAY!!)
I found this recipe on pinterest by Nora Cooks and it worked magically. I topped with with some Color Kitchen icing (I used two packets to make sure it was a TRUE PINK – to celebrate having a baby girl!) and sprinkles.
Color Kitchen is a favorite brand of mine because they are a health conscious company that aims to create effective + tasty food with SAFE food coloring. Per their website, “Coloring agents such as FD & C Red No. 40 are petroleum-based, chemically produced dyes that were invented in the early 1900s. Food colorings have been linked to Attention-Deficit/Hyperactivity Disorder (ADHD). An estimated 9.5% of American children suffer from ADHD. Of these children, about 8% are likely have problems related to artificial food colorings.”
I could go on and on. I personally know a lot of crunchy parents don’t even allow their kids to have ANY food that contains conventional food dye. I mean half of these conventional brands have the warning, ““May Have an Adverse Effect on Activity and Attention in Children.” UM HELLO! Okay – now let’s get to making these YUMMY treats.
COLOR KITCHEN ICING
Ingredients: ColorKitchen icing kit – ½ cup butter (room temp) or oil – 1 ½ Tbsp milk or substitute – 1 tsp vanilla
Directions: Put powdered sugar in medium bowl and mix in color powder. Once blended, stir in milk and vanilla. Add butter and beat with electric mixer until light and fluffy. Frost and top with sprinkles!
RICE KRISPY TREATS
Ingredients: 3/4 cup vegan butter – two 10-ounce bags vegan marshmallows – 1/2 teaspoon pure vanilla extract – 8 cups rice krispie cereal
Directions: Taken exactly from the amazing NoraCooks: Line a 9 x 13 inch baking pan with parchment paper and lightly spray with oil. Set aside. In a large pot, melt the vegan butter. Now add the vegan marshmallows and stir, until the marshmallows are melted. They won’t melt as well as regular marshmallows, but they should still melt and turn into sort of a big blob. Remove the pan from heat and stir in the vanilla. Now fold in the cereal using a large spoon or spatula. There will be chunks of marshmallows and that’s okay, just try to coat all the cereal. Transfer to the prepared pan and press down evenly either with your hands or a spatula. You can lightly grease the spatula if it sticks. Allow the treats to cool for 1 hour. Remove from the pan, using the parchment paper, then cut into squares and serve.
