Rose crystal infused tigernut chocolate chip cookie dough balls.
Say that three times fast. That’s a mouth full. But let me tell you – it is SO DELICIOUS! Maya Zimmerman, recipe and health blogger of @my.oh.maya came up with this recipe ESPECIALLY for y’all!
Here’s the recipe:
3/4 cup @organicgemini tigernut flour
1/3 cup @artisanaorganics melted coconut butter
1/4 cup @artisanaorganics melted coconut oil
1/2 tbs @lakanto monkfruit sweetener
1 tbs @savortree rose crystals
2 tbs @mountainroseherbs rose petals
1/2 tsp vanilla extract
1/2 bar chopped @eatingevolved chocolate
Most of all, I love the concept and beauty behind Maya’s recipe. She explains, “Using roses in my creations evokes my feminine energy. There’s something so beautiful and delicate about these flowers that subconsciously makes me approach my art more gently and experience a state of flow. I can simultaneously appreciate nature’s divine beauty and practice mindfulness. As I’m writing this, I realized you can’t spell flower without flow! That’s pretty neat.
I also made these for the gut loving benefits of tigernuts. Tigernuts are not in fact nuts, but small tubers with a sweet and nutty flavor. They’re high in resistant starch, which is starch that resists digestion and instead acts as prebiotic fiber. Prebiotics are food for probiotics. This means it feeds the good bacteria in your gut. It has been shown to specially feed species of bacteria that can protect against many diseases. Not only are these beneficial for your microbiome but they are great for your taste buds too.
A few other examples of resistant starch include cooked then cooled potatoes and sweet potatoes, cooked and cooled rice (especially long grain) and green bananas and plantains.”
