Kombucha mocktails, Beanitos chips + Better beans are the PERFECT Cinco De Mayo combo. Literally, my mouth is watering just thinking about it!
When it comes to eating healthy, I rather make modifications then eliminate my favorite foods. That’s why I opt for chips like Beanitos that are made with a ton of fiber, protein and duh BEANS.
Same thing when it comes to beans for my taco dip or quesadillas. I want to make sure I am indulging in the real deal. No sodium, fat, sugar, or chemical additives. Personally, I reach for Better Beans at the grocery store.
Better beans are non gmo, dairy free, vegan gluten free, soy free and nut free(aka works for any diet!).These beans are made with high quality ingredients and the flavors (all 8 of them) are so tasty you literally don’t need to do a thing other than heat them up!
Also, a worthy sidenote, beans are an excellent source of fiber, folate, vitamin B1, protein, magnesium, iron and more.
So what to do with all these….Better Bean options? Here are my three favorite ways to include better beans in my meals.
- Breakfast burrito: Adding some beans, as I noted above, to your first meal is such a good way to start your day with the protein + fiber your body needs! My breakfast burritos are always rather simple but feel free to go crazy. I use a Siete grain free tortilla shell, scrambled eggs, tomatoes, scallions, and Better Beans roasted chipotle red beans. I’ll be serving these today for Cinco De Mayo!
- Taco dip: My sweet husband LOVES this dip but little does he know that I have been swapping out those canned beans for some Better Beans black cuban beans. So good! I like to layer a little bit of grassfed beef, then layer the beans and place in the over 350 degrees for 10 minutes. Then I take it out and layer it with a dairy free sour cream, some mexican cheese, tomatoes, and scallions. Such a good combo. Especially during football season!
- Bean Pizza: Okay here me out on this one. All you need is a little cauliflower crust, some Better Beans southwestern pinto beans (which just so happens to be my FAVORITE FLAVOR!) and all your favorite veggies. I like to toss a little avocado, green peppers, tomatoes and some cheese on top. Cook it (depends on your crust) and indulge!
