I am NOT a food blogger but I did want to share one of my favorite, easy breakfast casseroles!
For those mornings where are you have exactly 10 minutes for breakfast before running off to school or ballet practice….
Shredded or diced potatoes (line the pan with them)
8 eggs
Shredded onions, peppers and raw cheese
Breakfast sausage
Dash of salt and pepper
Optional: hot sauce, @kitehillfoods sour cream and scallions!
Cook at 375 for 40minutes!
Make this night before so you just have to heat it up in the morning.
