While we are in quarantine, I’m trying so hard to avoid going to the grocery stores while also keeping our menu interesting. It is definitely a challenge. But I noticed that I had a ton of pumpkin puree in the pantry (I have no idea WHY!) so I found a 5 ingredient cookie recipe and let me tell you IT WAS WAY MORE DELICIOUS THAN ANTICIPATED. I promise – eat them warm with some milk – throw on frozen 2 – night is MADE.
So I did want to note some perks of pumpkin puree before giving you the recipe.

Here we go: Mix 1 cup pumpkin puree, 1/4 cup maple syrup, 1/2 cup peanut butter, 2 cup oats, and as many chocolate chips as you want. Scoop and places in the oven at 350* for 18 minutes and consume warm. YUM!
